The chemistry teacher, who has been running ultras around the globe since 1998, goes out of her way to eat smart, healthy and strategically.I test the possible race-day foods during my workouts. I train myself to eat those and usually try to choose dry, light, easy-to-carry, long-lasting foods, says Duran, the sole woman to complete the 2015 Runfire Cappadocia -- a six-day, 160-mile race that takes place across salt flats, foreign-looking rock formations and underground cities.For Runfire Cappadocia, Duran spent the first three days of the race eating packaged breads, natural cheeses, quick-ready pasta, dried meat, dried fruits like apples and figs, and tea, as well as powdered milk and cereals. Other go-to items in her fuel belt: mineral salt, mineral tablets, portable honey, chocolate and dried onions. I have to drink lots of water during the race, so I eat saltines to prevent queasiness, she says.At night after long runs, she often turns to a hearty soup -- to help sustain her from the endless miles upon miles. heres her favorite, a vegetarian Shepherds Soup adapted from her mother.Time: Dinner is usually ready around 8 p.m.Place: I never dine out. After cooking all the grains, add the diced potatoes. If the water inside the pot decreases, add more water. After the soup is cooked, lower the heat completely, and let it sit.In another pan, melt the butter and add finely chopped onion. Fry until it turns golden brown. Then add grated tomatoes (or tomato paste), chopped sweet peppers (or pepper paste), mint, thyme and cumin. Mix them well, then pour into the soup. Mix again.In another bowl, whip the yogurt with smashed garlic and 1 glass of cold water. Pour it into the soup and mix.
